Adovada means cooking with a blend of red chiles and spices. Our Carne Adovada is all natural pork and a luscious blend of New Mexico red chiles and spices slow cooked to a succulent tenderness and combined with white, pearl sticky rice. This pairing from the Land of Enchantment and the seductive Orient wrapped in bamboo leaves evokes ristas drying in the sun, Rancho cooking and the smell of clear mountain air.
